From the customer's point of view:

While blueing looks great, I agree that it just doesn't hold up well. I do like a black parkerizing, but am not always sure who does it well(other than Texas Armaments). Robar also does black chromium sulfide, which can be done on stainless, and I think is tougher than parkerizing. Looks nice and black.
My latest gun built by Wayne Novak went kind of 80's retro - blue slide with polished sides, and hard chrome lower by Tripp. Excellent chrome, and no waiting around for months on end.
I did have a gun done completely in NP3 some years back, and thought it was a good finish, but kind of expensive. They will do aluminum frames, but won't guarentee it like they do on steel.
My Novak LW COmmander has a matte black hard anodize frame, but Wayne won't divulge who does it for him.

Fellas,

This stainless steel Dan Wesson Razorback was rebuilt for me by Dave Sams of Sams Custom Gunworks. It is the third stainless gun he's done for me, and they all look great. Although it gives stainless steel little or no additional hardness or rust protection, it does look good, and even gets many people to assume it's blued carbon steel.

Two negatives... 1) It is near impossible to get a polished finish with it. For some reason, it makes everything look matte. It's a glossy matte, but matte nonetheless 2) Some guns don't want to turn black on the first try, so they have to be acid etched and redone, which can take up a lot of time. It wears very similar to bluing, but I think it's actually slightly more durable, albeit not by much.

Here's the post on the rest of the gun. http://www.louderthanwords.us/forum/viewtopic.php?t=744
